At the Counter x Peter Gordon, Chantelle Nicholson & Judy Joo

This week Natalia was joined by three amazing chefs for At the Counter’s 1st birthday!

Kiwi chefs Peter Gordon (The Providers & Tapa Room) and Chantelle Nicholson (Tredwells) came to talk all about a special dinner they are putting on on 1st May at Tredwells in Seven Dials. This harmonious fusion of two unique Kiwi talents sees each chef taking a course celebrating the humble vegetable. Peter will kick off the proceedings with an amuse bouche of Cassava sesame fritter, mango, chrain followed by Chantelle’s starter of Caramelised aubergine tartlet, zhug, coconut & coriander. Peter returns with a triumphant second starter of Miso sesame courgettes, Jersey Royals, kimchi, tofu, seaweed, with Chantelle coming back in to deliver a main course of Spring pea and broad bean gnudi, asparagus, confit lemon & fennel, tempura spring onions with romesco sauce. Peter will create a penultimate sweet dish of Coconut tapioca, avocado mango sorbet, chillied pineapple designed to cleanse the palate, with Chantelle bringing in an indulgent Dark chocolate mousse, with cocoa nibs, passion fruit & chamomile to conclude the meal.

Next we had Korean chef Judy Joo of Jinjuu in Soho and Hong Kong, who brought some amazing Korean friend chicken, kimchi fried rice and kimchi to taste. She has been working with Tabasco to come up with a really fun sauce using Tabasco original sauce and Gochugang as well as a Tabasco kimchi.
